O nosso espírito de sustentabilidade é transversal, combinando questões ambientais, culturais e económicas. Acreditamos que a sustentabilidade advém da utilização de produtos artesanais, biológicos e de origem local. Acreditamos na promoção das pequenas produções, dos negócios familiares e de uma cultura de respeito pelo meio, pela natureza e pela matéria-prima, concretizando uma economia circular, baseada numa acção equilibrada do homem, de reduzida pegada ecológica. O segredo está na genuinidade dos elementos, nas condições do terroir, do pasto, na criação de animais felizes que vivem em liberdade e se alimentam biologicamente, nas espécies autóctones, nas estações até à forma como o produto é manuseado, com muito respeito e pouco desperdício.

Our spirit of sustainability is transversal, combining environmental, cultural and economic issues. We believe that sustainability comes from the use of artisanal, organic and locally sourced products. We believe in the promotion of small productions, family businesses and a culture of respect for the environment, nature and raw materials, making a circular economy based on a balanced action of man, with a reduced ecological footprint. The secret lies in the genuineness of the elements, the conditions of the terroir, the pasture, the creation of happy animals that live in freedom and feed themselves biologically, in the native species, in the seasons until the way the product is handled, with much respect and little waste.
